We've now moved on to ordinary outdoor rhubarb, and as the weather has fast-forwarded from April to August, I've churned a tub of our favorite Rhubarb Ice Cream.
But inspired by Sue's ice lolly factory and this fabby book from Williams-Sonoma,
I've taken things one step further and made a tray of Rhubarb Pops!
The recipe suggests decreasing the sugar by a few tablespoons if you prefer pops that are more tart, and I think I might do that next time. But they're still pretty yummy just as they are. There's plenty more rhubarb...now just hoping there's plenty more sun!

ReplyDeleteReally good flavor. Rhubarb popsicles are actually more exciting than the name suggests. The first time I had a iced confection made from a vegetable!

ReplyDeleteOh yumm! I had rhubarb with polenta cake and creme fraiche yesterday which was lots of trouble lovely, but I think rhubarb lollies sound delish!
